Day Four if Mary’s Birthday Week Giveaway!! Today is all about my favorite ways to rest and be creative.

I have had many hobby’s over the years, especially when I was home caring for Courtney. My Grandma Green used to say “Idle hands are the devils workshop”, so this girls hands have been busy.
.
I sew, bake, cross-stitch, sometimes watercolor, have repurposed furniture and I always light a candle when I journal. I listen to audiobooks or music when I walk. Hot tea is definitely part of my rest ritual as well. And I love a hand written note.
.
When I was curating this giveaway, I wanted to share those things with y’all. @kitchen_house_studio Graciously provides a beautiful set of note cards. This is the face of a woman who spent the weekend in ministry to other women for the first time since March. Oh how I missed being with my people, praying with them and over them, listening and learning, and building community. My heart is as full as this basket of chocolate given as a gift from the women I was so honored to serve. They know me well 🍫😊 Palmyra, PA you rock!!

This was my Pieta. Day in and day out, holding my daughter close to my heart, loving her as best we could knowing all along her time was short.

I have grown to love this Feast Day of Our Lady of Sorrows, because more than anyone, she understands my pain and grief. She has felt all that I have and more.
.
She taught me that death does not win. Hope wins. Life wins. Light wins. Jesus wins.
.
On nights like tonight when my heart is tender and full of memories of my girl, I think of my sweet Mother Mary and breath deep the truth of what it is to love with you very life. Thank you God for choosing me to love Courtney. To protect her, advocate for her and walk her home to you.

You cannot have Easter Sunday without Good Friday. You cannot gain heaven without dying to self. It’s all about perspective. Courtney taught me that.

It’s been awhile since I’ve posted a recipe. These Italian Meatballs are another family fave. Moist and packed with flavor they make a great Meatball Sub or Spaghetti with Meatballs. They only take less than 30 min from start to finish. Give them a try and let me know what you think.

Mary’s Italian Meatballs
.
2 pounds ground hamburger
1 cup seasoned bread crumbs
3/4 cup Parmesan cheese, finely grated
1/2 cup whole milk
3/4 cup chopped fresh parsley
3 eggs, beaten
2 T. dried oregano
2 1/2 T. garlic, minced or 1 T garlic powder
1 T. kosher salt
1 1/2 T. ground black pepper
2 T dried basil--or a 1/2 cup of minced fresh basil
1/2 t. crushed red pepper flakes
1/8 t Nutmeg

Cover bottom of cookie pan with:
1 1/2 cup low sodium beef broth to keep the meatballs moist.
.
DIRECTIONS:
1. Preheat oven to 450 degrees
2. Stir together all ingredients in a large bowl.
3. Mix thoroughly
4. Shape the mixture into balls about 2"in diameter.
5. Space the meatballs so that they are not crowded together on the baking sheet.
6. Pour in 1 1/2 cup beef broth.
7. Bake for 20 minutes or until the meatballs are just cooked
8. Place meatballs into a pot of simmering sauce. We use @raoshomemade ❤️
