1 lb breakfast sausage (you can use a maple flavor sausage for an extra boost)
5 large eggs
1 cup whole milk
1/2 tsp salt
1/2 tsp ground pepper
2 cups shredded sharp cheddar cheese
1/2 cup chopped green onion
3 cups frozen tater tots/hash browns/cubed potatoes
Preheat oven to 375. Spray 6 jumbo muffin cups with baking spray with flour
Cook sausage until brown and crumbly. Remove sausage with slotted spoon and drain..
Whisk together eggs, milk, salt and pepper. Site in sausage, cheese, and green onion. Divide potatoes among cups and top with sausage mixture
Bake until wooden toothpick comes out clean-25 to 30 minutes. Let cool in pan 5 minutes before serving.
